Comfort Snacks for the Trail

I’ve given you my Rocky Road and Banana Pudding Recipes for the trail and now I have a few other delectable desserts that take little preparation before the hike, and are just as easy to prepare on the trail.

Here they are:

Hiker’s Pina Colada Pudding (Makes three servings)
1 3.9-oz. pkg. Coconut Cream Instant Pudding
½ cup Meyenberg Whole Powdered Goat’s Milk
3 tbsp. dehydrated coconut shreds, packaged into 3 bags*
3 tbsp. Harmony House freeze-dried pineapple pieces (chopped) same*

Open Jello Pudding package and pour into a bowl. Add powdered milk and mix very well, breaking up clumps of milk. Weigh powder and divide by three (156 grams). In a snack-size baggie, add 1/3 of the pudding powder, 1 pkg. of coconut shreds, and 1 pkg. pineapple pieces. To use, pour powder into a smoothie-shaker cup and add ¾ cup water. Shake until well-mixed. Pour coconut and pineapple in and stir.

Strawberry Crème Pudding (Makes three servings)
1 3.9-oz. pkg. Strawberry Crème Instant Jello Pudding
½ cup Meyenberg Whole Powdered Goat’s Milk
3 3-tbsp. packages Harmony House freeze-dried Strawberries

Open Jello Pudding package and pour into a bowl. Add powdered milk and mix very well, breaking up clumps of milk. Weigh powder and divide by three (156 grams). In a snack-size baggie, add 1/3 of the pudding powder, and 1 3-tbsp. pkg. of freeze-dried strawberries. To use, pour powder into a smoothie-shaker cup and add ¾ cup water. Shake until well-mixed. Pour in fruit and stir.

Lemon Parfait Pudding (Makes three servings)
1 3.9-oz. pkg. Lemon Instant Jello Pudding
½ cup Meyenberg Whole Powdered Goat’s Milk
3 ½ cup dehydrated angel-food cake cubes

Open Jello Pudding package and pour into a bowl. Add powdered milk and mix very well, breaking up clumps of milk. Weigh powder and divide by three (156 grams). In a snack-size baggie, add 1/3 of the pudding powder and 1 ½ cup pkg. cake cubes. To use, pour powder into a smoothie-shaker cup and add ¾ cup water. Shake until well-mixed. Pour in, cake, and stir.

White Chocolate/ Blackberry Parfait (Makes three servings)
1 3.9-oz. pkg. White Chocolate Instant Jello Pudding
½ cup Meyenberg Whole Powdered Goat’s Milk
3 ½ cup dehydrated angel-food cake cubes
3 3-tbsp. packages Harmony House freeze-dried blackberries.

In a snack-size baggie, add 1/3 of the pudding powder, and 1 3-tbsp. pkg. of freeze-dried blackberries and 1 ½ cup pkg. cake cubes. To use, pour powder into a smoothie-shaker cup and add ¾ cup water. Shake until well-mixed. Pour in fruit, cake, and stir.

Blueberry Cheesecake Pudding (Makes three servings)
1 3.9-oz. pkg. Cheesecake Instant Jello Pudding
½ cup Meyenberg Whole Powdered Goat’s Milk
3 3-tbsp. packages Harmony House freeze-dried blueberries

Open Jello Pudding package and pour into a bowl. Add powdered milk and mix very well, breaking up clumps of milk. Weigh powder and divide by three (156 grams). In a snack-size baggie, add 1/3 of the pudding powder, and 1 3-tbsp. pkg. of freeze-dried blueberries. To use, pour powder into a smoothie-shaker cup and add ¾ cup water. Shake until well-mixed. Pour in fruit and stir.

These snacks are loaded with fat, carbohydrate, and protein.  Enjoy!

Rocky Road Pudding

On the trail, there is only one way to get cold food, and that is to use nature for what she has to offer. Dropping a drink into an ice cold stream will do that. But what if you want cold food?

I have a hiking recipe for pudding that is sure to be chilly on a hot summer day because I will use water from the coldest stream I can find. Here is the recipe:

Hiker’s Rocky Road Pudding (Makes three servings)
1 3.9-oz. pkg. Chocolate Fudge Instant Jello Pudding
½ cup Meyenberg Whole Powdered Goat’s Milk
3 tbsp. Jet-Puffed Mallow Bits, packaged into 1 tbsp. servings.
3 tbsp. soaked and dehydrated walnut pieces, packaged into three servings

Open Jello Pudding package and pour into a bowl. Add powdered milk and mix very well, breaking up clumps of milk. Weigh powder and divide by three (156 grams). In a snack-size baggie, add 1/3 of the pudding powder, 1 pkg. of Mallow Bits, and 1 pkg. walnut pieces. To use, pour powder into a smoothie-shaker cup and add ¾ cup water. Shake until well-mixed. Pour nuts and mallow bits in and stir.
